The Whole Living Detox – Week 1 Recipe – Spiced Butternut Squash and Apple Soup – or, in my words – soup of late winter wonder – cardamon and creamy veggie love affair (*note : creamy without the cream! just water!).

I love butternut squash soup. Love it!! I first discovered that I was in love with this soup when I got Curried Butternut Squash Soup at San Francisco Soup Co. – After that I frequently visited that Soup Co – but I know those soups are pre-made and most likely loaded with sodium. Anyway, I am starting this detox and in preparation for lunch at work I made this delicious soup recipe. I found out a lot of things about myself such as – I needed to look up how to chop butternut squash, I needed to learn how to chop ginger, I needed tupperware for storage, I need a peeler, my back hurts after I cook…*whine,whine,whine…hehe…but I also learned that COOKING IS GOOD. This soup I made is yumtum. I will not be tempted to eat anything but this soup for lunch (for a few days anyway!). Here are some pictures to chronicle my messy, nighttime cooking mess of a mess…I literally finished chopping something, swept it hazardously to the side and went right on chopping something else – sometimes getting skin, seeds, and such all in the mix – but I sorted it out in the end, don’t you worry.

Also, for your entertainment – this is what I resorted to while chopping onions since I cry uncontrollably whilst handling them. These are Josh’s hardcore swim team goggles. They hurt my face – but no tears!
