So my goal to eat healthy and workout is going well (I’ve only skipped the gym once!). Part of my plan, though hard to pull off because of  all that other time-consuming stuff like homework, is that I would like to make one meal a week. Last week it was mini spinach quiches from the latest Pillsbury Bake-off Cookbook which is full of some godly recipes. Here’s the result. Maria and I devoured them as on-the-go lunches. So delicious – asiago, parmesan, egg, spinach, garlic, onion, and flakey crescents in a compact muffinesque shape!
